Grilled Chicken Caprese – Delicious Meets Healthy

This grilled chicken caprese takes less than 30 minutes to make and you end up with such juicy and flavorful chicken. This tasty meal is made with fresh and wholesome ingredients and is perfect for a summer evening.

My husband and I were in California couple weeks ago, and I had this delicious grilled chicken Caprese at a restaurant one day. It was topped with mozzarella and tomato relish. It was really good and I thought I will have to recreate it for my food blog. My husband cleaned his plate and wanted seconds. 🙂
You can plate it over rice, quinoa or serve it only with the tomato relish. It’s a perfect and light summer weeknight dinner!

Grilled Chicken Caprese Ingredients
- Chicken breasts
- Extra virgin olive oil
- Salt and pepper
- Garlic powder and dried basil
- Tomatoes
- Onion and garlic
- Mozzarella slices
- Fresh basil
Honey Balsamic Vinaigrette
How To Make Grilled Chicken Caprese
- Half each chicken breast horizontally as if you are butterflying it.
- Brush each chicken breast with some olive oil and seasoings. Set aside and let marinate until you prepare the tomato topping.
- In a medium mixing bowl, combine the chopped tomatoes, red onion, and minced garlic. Add some olive oil, season with salt and mix well.
- Grill chicken over medium-high heat (or use a grill pan to cook the chicken on the cook top).
- While you grill the chicken, prepare the honey balsamic vinaigrette. Combine all ingredients in a small bowl and mix well.
When the chicken is done, serve on a plate and place 1 mozzarella slice over each chicken breast. Top with tomato mixture and drizzle some honey balsamic vinaigrette. Enjoy!
How do you add flavor to chicken breasts?
I like to season the chicken breasts with herbs and spices, it adds so much more flavor. And if you have time to marinate the chicken breasts, they will be much more flavorful and tender. But you can skip this step if you don’t have time. It will still turn out great!
What is caprese?
Caprese refers to an Italian salad made with tomatoes, mozzarella and basil. I took those ingredients and diced them to to make a relish or salsa to top the chicken.
For the tomato relish, I mixed tomatoes, onion, and garlic and seasoned with salt & olive oil. It’s simple but big on flavor. It’s similar to my tomato salad recipe. The honey balsamic vinaigrette adds a really nice sweet tangy flavor to the tomato relish.
Can you make chicken caprese ahead of time?
The chicken caprese is best served as soon as it is ready so that it nice and juicy and tender. The tomato relish can be made ahead of time and kept covered in the fridge for 3 to 4 days. You can also marinate the chicken for up to 8 hours.
If you do have leftovers, keep them in an airtight container for up to 3 days. You can eat the chicken cold with a salad or heat it through in the oven.
Recipe Notes and Tips
- Use the ripest tomatoes for the best flavors. I like to use plum tomatoes but cherry tomatoes will also work really well.
- You can grill the chicken on an outdoor grill or on a grill pan on the stovetop. Be sure that the grill or pan is preheated before adding the chicken so that it cooks evenly through.
- Use an instant read thermometer to check that the chicken is cooked all the way through. It should register at 165F.

Honey Balsamic Vinaigrette

Half each chicken breast horizontally as if you are butterflying it (Now you should have 4 thinner chicken breasts). Brush each chicken breast with some olive oil (about 2 Tbsp) and season with salt, pepper, garlic powder and dried basil. Set aside and let marinate until you prepare the tomato topping. If you have time you can marinate it for a couple of hours or overnight.
In a medium mixing bowl, combine the chopped tomatoes, red onion, and minced garlic. Add about 1 Tbsp olive oil, season with salt and mix well.
Grill chicken over medium-high heat (or use a grill pan to cook the chicken on the cook top).
